  • 3 medium-sized beets (about 450g)
  • 1 cup plain full-fat yogurt (240g)
  • 2 cloves garlic, minced
  • 2 tsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • Fresh dill or mint for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 1 hour until tender.
  2. Allow the roasted beets to cool for 10 minutes, then peel off the skins.
  3. Dice the beets into small cubes and combine them in a bowl with yogurt, minced garlic, olive oil, and lemon juice.
  4. Mix until well combined for a colorful presentation.
  5. Transfer to a serving bowl and garnish with fresh dill or mint before serving chilled.
