- 2 tbsp fresh sage, chopped
- 2 tbsp olive oil
Instructions
- Rinse wild rice under cold water. In a medium pot, combine with vegetable broth and bring to a boil over medium heat. Reduce heat to low, cover, and simmer for 45 minutes until tender.
- In a large skillet over medium heat, add olive oil. Sauté onion and celery until translucent (about 5 minutes).
- Add sliced mushrooms and toasted nuts to the skillet; cook until mushrooms are tender (about another 5 minutes).
- Mix sautéed vegetables with cooked wild rice in the skillet. Stir in cranberries and fresh herbs.
- Transfer to a serving bowl and let cool slightly before serving.
