- 2 tsp fresh thyme (or 1 tsp dried thyme)
- 2 tbsp olive oil
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large skillet over medium heat, add olive oil. Sauté shallots and garlic until fragrant (about 2 minutes). Add mushrooms; cook until browned and moisture is released.
- Stir in sautéed spinach and thyme; season with salt and pepper. Remove from heat and cool slightly.
- Roll out the puff pastry into a rectangle on a floured surface. Spoon the mushroom filling into the center and fold the pastry over to seal tightly.
- Brush the top with an egg wash if using. Bake for 25-30 minutes until golden brown.
