- 2 cups celery, chopped
- 2 cups Yukon Gold potatoes, diced

- 6 cups low-sodium vegetable broth

- 1 tsp dried oregano
- 2 bay leaves
- 2 cups zucchini, sliced
Instructions
- Wash and chop all vegetables into bite-sized pieces.
- In a large pot over medium heat, add 2 tbsp olive oil. Sauté onions and garlic for 3-5 minutes until translucent.
- Stir in carrots and celery; cook for another 5 minutes.
- Pour in vegetable broth along with potatoes, thyme, oregano, and bay leaves. Bring to a boil then reduce heat to simmer.
- Simmer on low for 20-30 minutes until veggies are tender but intact.
- Add zucchini during the last 5 minutes of cooking.
- Serve hot, garnished with fresh parsley if desired.
