- 1/3 cup pure maple syrup
- 1 cup chopped pecans
- 1 tsp ground cinnamon
- 1/2 cup light brown sugar
- 1/2 cup rolled oats
Instructions
- Preheat your oven to 350°F (175°C) and lightly spray a 9×13 inch baking dish with nonstick cooking spray.
- Peel and chop the sweet potatoes into chunks. Boil in water for 15-20 minutes until tender.
- Drain the sweet potatoes and return them to the pot. Add coconut milk, maple syrup, cinnamon, and a pinch of salt. Mash until smooth.
- In a separate bowl, mix chopped pecans, oats, brown sugar, melted coconut oil (or vegan butter), and cinnamon for the topping.
- Spread the mashed sweet potato mixture in the prepared baking dish and top with the pecan mixture.
