- 4 large flour tortillas
- 1 pound lean ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups shredded sharp cheddar cheese
- 1 cup salsa (mild or spicy)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Sour cream for serving
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, brown the ground beef for about 5-7 minutes. Drain excess fat and stir in chili powder, cumin, and half of the salsa.
- Layer two tortillas in the baking dish. Spread half of the meat mixture on top, followed by half of the black beans and a handful of cheese.
- Add two more tortillas and repeat with remaining meat mixture, beans, and cheese. Top with final tortillas, remaining salsa, and cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until golden brown.
- Let cool for five minutes before slicing. Serve hot with dollops of sour cream.
