  • 2 tbsp fresh ginger, minced (about 1 thumb-sized piece)
  • 4 garlic cloves, minced
  • 1/4 cup Korean gochujang paste
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 3 large carrots, thickly sliced
  • 2 sweet onions (like Vidalia), quartered

Instructions

  1. Preheat your Traeger grill to 225°F (107°C).
  2. In a bowl, mix garlic, ginger, gochujang, soy sauce, and brown sugar to create the marinade.
  3. Coat the chuck roast with the marinade and let it sit for at least 1 hour.
  4. Sear the marinated roast on the grill for about 5 minutes on each side.
  5. Surround the roast with carrots and onions in a grilling pan; pour any remaining marinade over everything.
  6. Close the grill lid and cook for approximately 4 hours or until the internal temperature reaches 195°F (90°C).
