- 1 cup panko breadcrumbs
- 2 tbsp curry powder
- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup low-sodium soy sauce
- 1 cup vegetable broth
- 1/2 cup flour
- 2 eggs (or flaxseed mixture for vegan option)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Press the tofu for 30 minutes to remove excess moisture, then slice into half-inch thick rectangles.
- Set up a dredging station with flour, beaten eggs (or flaxseed mixture), and seasoned panko breadcrumbs.
- Heat oil in a skillet over medium heat. Coat each tofu slice in flour, dip in egg (or flaxseed), then coat with panko. Fry until golden brown on both sides, about 3-4 minutes per side.
- In a separate pot, heat oil and sauté chopped onions until translucent. Add garlic and ginger, then stir in curry powder.
- Pour in coconut milk and vegetable broth; simmer for 10-15 minutes until slightly thickened; adjust seasoning with soy sauce.
