Ingredients

Scale
  • 3 cups boneless, skinless chicken breasts (about 4 breasts)
  • 2 cloves fresh garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 sheets puff pastry

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. Cook in a skillet over medium heat with a splash of oil until golden brown, about 5–7 minutes per side. Remove and dice into bite-sized pieces.
  3. In the same skillet, sauté garlic and carrots for about 3 minutes. Add frozen peas and chicken broth; simmer gently. Stir in heavy cream until well combined.
  4. Mix diced chicken into the skillet, ensuring all ingredients are coated.
  5. Roll out puff pastry sheets slightly larger than the baking dish, pour filling into the dish, cover with pastry, cut slits for steam to escape, and optionally brush with egg wash.
  6. Bake for 30–35 minutes or until golden brown.
