  • 1 cup quinoa
  • 1 cup cucumber (diced)
  • 1 red bell pepper (sliced)
  • 2 medium carrots (grated)
  • ¼ cup cilantro (chopped)
  • 3 tbsp peanut butter
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey or maple syrup
  • chili flakes to taste (optional)

Instructions

  1. Rinse quinoa under cold water until clear. Cook in a pot with 2 cups of water on high heat until boiling. Reduce heat to low, cover, and simmer for about 15 minutes until all liquid is absorbed.
  2. While quinoa cooks, chop cucumber, slice red bell pepper, and grate carrots into a mixing bowl.
  3. In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey/maple syrup, and optional chili flakes until smooth.
  4. Once quinoa cools, fluff it with a fork and combine it with the chopped veggies in the mixing bowl. Drizzle dressing over salad; toss gently to combine.
  5. Garnish with cilantro before serving.
