- 1 tbsp lime juice
- 1 tbsp honey or maple syrup

Instructions
- Rinse quinoa under cold water until clear. Cook in a pot with 2 cups of water on high heat until boiling. Reduce heat to low, cover, and simmer for about 15 minutes until all liquid is absorbed.
- While quinoa cooks, chop cucumber, slice red bell pepper, and grate carrots into a mixing bowl.
- In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey/maple syrup, and optional chili flakes until smooth.
- Once quinoa cools, fluff it with a fork and combine it with the chopped veggies in the mixing bowl. Drizzle dressing over salad; toss gently to combine.
