  • 1 lb boneless, skinless chicken breasts, ground
  • 3 cloves fresh garlic, minced
  • 4 green onions, chopped
  • ½ cup fresh cilantro, chopped
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp red curry paste
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, mix ground chicken with garlic, green onions, cilantro, salt, and pepper until combined.
  2. Roll mixture into one-inch meatballs and place on a parchment-lined baking sheet.
  3. Bake for 20 minutes or until golden brown and cooked through.
  4. In a skillet over medium heat, combine coconut milk and red curry paste; stir until smooth. Add soy sauce and lime juice.
  5. Once meatballs are cooked, add them to the skillet and let simmer for five minutes.
