  • 2 tbsp fresh garlic, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp red curry paste
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1 cup snap peas
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice

Instructions

  1. Chop the chicken into bite-sized pieces and slice the vegetables.
  2. In a large skillet over medium heat, add oil and sauté garlic until fragrant (about 1 minute). Add chicken and cook until golden brown on all sides.

  5. Stir in soy sauce and lime juice; simmer for an additional few minutes until heated through.
