  • 1 cup whole milk (or almond/oat milk for dairy-free)
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, chopped
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with nonstick spray.
  2. Boil diced sweet potatoes in salted water for 10-12 minutes until tender; drain well.
