- 1 cup cooked rice
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- 1 tsp Italian seasoning
- Pinch of red pepper flakes (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish drizzled with olive oil.
- In a skillet over medium heat, brown the ground beef until fully cooked. Add chopped onions and minced garlic; sauté until softened.
- In a bowl, combine cooked rice with the meat mixture, diced tomatoes (with juices), half of the cheese, salt, pepper, and seasonings.
- Generously fill each pepper with the mixture until overflowing.
- Cover with foil and bake for 30 minutes. Remove foil, sprinkle remaining cheese on top, and bake uncovered for an additional 10 minutes until melted.
