- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Cut the tops off the bell peppers and remove seeds. Trim bottoms if necessary for stability.
- In a skillet over medium heat, sauté onions until translucent. Add garlic and cook until fragrant. Stir in ground beef and cook until browned; drain excess fat.
- Combine cooked rice, diced tomatoes (with juice), spices, and half of the cheese in the skillet. Mix well.
- Fill each pepper generously with the beef-rice mixture and place upright in the baking dish.
- Cover with foil and bake for about 25 minutes. Remove foil, add remaining cheese on top, and bake uncovered for an additional 10-15 minutes until bubbly.
