  • 8 rice paper wrappers
  • 1 cup mixed fresh vegetables (bell peppers, carrots, cucumbers)
  • 1 cup cooked shrimp or chicken, sliced
  • ¼ cup fresh mint or cilantro
  • ½ cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • Juice of 1 lime
  • Water as needed

Instructions

  1. Prepare your ingredients by washing and slicing the vegetables into thin strips. Cook shrimp or chicken thoroughly if not pre-cooked.
  2. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, and enough water to reach a drizzling consistency.
  3. Soak each rice paper wrapper in warm water for about 10-15 seconds until soft.
  4. Lay the softened wrapper flat on a clean surface. Add vegetables, protein, and herbs towards the bottom third of the wrapper.
  5. Fold in the sides and roll tightly from bottom to top. Repeat until all ingredients are used.
  6. Serve immediately with peanut sauce for dipping.
