  • ½ cup grated Parmesan cheese
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Boil the Pasta: In a large pot of salted water, cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. 2. Prep the Veggies: While the pasta cooks, snap off woody ends from asparagus and shell fresh peas if using.
  3. 3. Sauté Aromatics: In a skillet over medium heat, heat olive oil. Add minced garlic and sauté until fragrant.
  4. 4. Add Veggies: Stir in asparagus and cook for 3-4 minutes until tender-crisp. Add peas and cook for an additional 2 minutes.
  5. 5. Create the Sauce: Pour in heavy cream and add grated Parmesan cheese until melted. Stir in lemon juice; if too thick, add reserved pasta water.
