  • 1 cup shrimp (peeled and deveined)
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cups low-sodium vegetable broth
  • 2 tbsp fresh ginger (grated)
  • 23 Thai bird chilies (adjust to taste)
  • 2 tbsp lime juice (freshly squeezed)
  • 1/4 cup fresh cilantro (for garnish)

Instructions

  2. In a large pot over medium heat, sauté onions and bell peppers in a splash of oil until soft.
