  • 1 can (15 oz) black beans (drained)
  • 1 cup corn (fresh or frozen)
  • 1 avocado (sliced)
  • 1 cup pico de gallo

Instructions

  1. Rinse brown rice under cold water. Combine with 2 cups of water in a pot, bring to a boil, then reduce heat and simmer covered for about 45 minutes until tender.
  2. Season the steak with salt, pepper, cumin, and chili powder. Grill or pan-sear over medium-high heat for 5-7 minutes per side for medium-rare. Let rest before slicing.
  3. Sauté sliced bell peppers and corn in olive oil over medium heat for about 5-6 minutes until tender.
