Description

  • 2 lbs beef chuck roast
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup low-sodium beef broth
  • 8 corn or flour tortillas
  • Fresh toppings: cilantro, diced tomatoes, shredded lettuce, avocado

Instructions

  1. Trim excess fat from the beef chuck roast and cut it into large chunks. Season with salt and pepper.
  2. In a skillet over medium heat, sauté the chopped onion until translucent. Add minced garlic and cook until fragrant.
  3. Place the beef in the slow cooker and add the sautéed onions, garlic, taco seasoning, and beef broth. Stir to combine.
  4. Cover and cook on low for 8 hours or high for 4 hours until tender.
  5. Shred the beef with two forks in the slow cooker and mix well with juices.
  6. Warm tortillas and fill with shredded beef and desired toppings.
