  • 1 lb shrimp (peeled and deveined)
  • 1 cup bell peppers (sliced)
  • 1 cup carrots (thinly sliced)
  • 4 green onions (chopped)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 3 cloves garlic (minced)

Instructions

  1. Cook the lo mein noodles according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large skillet or wok, heat a splash of oil over medium-high heat. Sauté bell peppers and carrots until tender-crisp.
  3. Add shrimp to the skillet and cook until they turn pink and opaque, about 3 minutes.
