  • ¾ cup salted butter, softened
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 cup heavy cream (for topping)
  • 1 cup granulated sugar (for caramel)
  • Flaky sea salt (to taste)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, espresso powder, and salt.
  3. In another bowl, cream butter with granulated and brown sugars until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely before removing from pans.
  6. For the caramel sauce, melt sugar in a saucepan until golden brown; add butter and heavy cream while whisking continuously. Stir in sea salt to taste.
  7. Stack cooled cake layers with salted caramel drizzled between them; top with more caramel sauce.
