- 1 lb fresh salmon fillets
- 2 cups short-grain sushi rice
- 1 ripe avocado, diced
- 8 oz cream cheese, softened
- 4 green onions, chopped
- 3 tbsp low-sodium soy sauce
- 1 tbsp Sriracha
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Cook sushi rice according to package instructions and set aside.
- In a bowl, mix softened cream cheese, chopped green onions, diced salmon, soy sauce, and Sriracha until well combined.
- Layer half of the cooked sushi rice in the baking dish, followed by the creamy salmon mixture and then the remaining sushi rice.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until golden brown on top.
