- 300g linguine pasta
- 200g skinless salmon fillets (about 2 fillets)
- 3 cloves fresh garlic, minced
- 2 tbsp high-quality chilli oil
- 200g cherry tomatoes, halved
- Handful of fresh basil leaves
- Juice of 1 lemon
Instructions
- Cook the linguine in boiling salted water for 8-10 minutes until al dente. Reserve half a cup of pasta water before draining.
- Season salmon fillets with salt and pepper. In a skillet over medium heat, add olive oil and place the salmon skin-side down. Cook for about 4 minutes until golden brown.
- Flip the salmon to cook for another 3 minutes, then remove it from the skillet. In the same skillet, sauté minced garlic and halved cherry tomatoes for about 2 minutes until fragrant.
- Return the salmon to the skillet and break it into chunks using two forks. Add cooked linguine along with chilli oil and reserved pasta water to create a sauce.
- Stir in lemon juice, adjust seasoning if needed, and serve garnished with torn basil leaves.
