  • 300g linguine pasta
  • 200g skinless salmon fillets (about 2 fillets)
  • 3 cloves fresh garlic, minced
  • 2 tbsp high-quality chilli oil
  • 200g cherry tomatoes, halved
  • Handful of fresh basil leaves
  • Juice of 1 lemon

Instructions

  1. Cook the linguine in boiling salted water for 8-10 minutes until al dente. Reserve half a cup of pasta water before draining.
  2. Season salmon fillets with salt and pepper. In a skillet over medium heat, add olive oil and place the salmon skin-side down. Cook for about 4 minutes until golden brown.
  3. Flip the salmon to cook for another 3 minutes, then remove it from the skillet. In the same skillet, sauté minced garlic and halved cherry tomatoes for about 2 minutes until fragrant.
  4. Return the salmon to the skillet and break it into chunks using two forks. Add cooked linguine along with chilli oil and reserved pasta water to create a sauce.
  5. Stir in lemon juice, adjust seasoning if needed, and serve garnished with torn basil leaves.
