  • 4 medium carrots, peeled and cut into 1-inch pieces
  • 1 cup semi-pearled farro
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup crème fraîche (or sour cream)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a baking sheet lined with parchment paper, toss the carrots with 2 tablespoons of olive oil, salt, and pepper. Roast for 25-30 minutes until tender and caramelized.
  3. While the carrots roast, cook the farro according to package instructions in boiling salted water for about 20-25 minutes until tender but still chewy.
  4. In a large bowl, combine the roasted carrots, drained chickpeas, cooked farro, thyme, and parsley. Toss gently.
  5. Serve topped with dollops of herbed crème fraîche and an additional drizzle of olive oil if desired.
