- 1 whole turkey (12–14 pounds)
- 2 tbsp kosher salt
- 1 tsp freshly ground black pepper
- 4 tbsp softened butter
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp lemon zest
- 1 lemon, juiced
- 2 cups breadcrumbs
- 1 onion, chopped
Instructions
- Preheat oven to 325°F (165°C). Remove giblets from turkey and pat dry. Season inside and out with salt.
- In a bowl, combine butter, rosemary, thyme, lemon zest, salt, and pepper. Mix well.
- Lift turkey skin over the breast and rub half of the herb butter underneath; spread the rest on the outside.
- If using stuffing, fill the cavity with breadcrumbs mixed with sautéed onion.
- Place turkey breast-side up in a roasting pan on a rack. Roast for approximately 13 minutes per pound or until internal temperature reaches 165°F (75°C), basting every hour.
- Allow to rest for 20-30 minutes before carving.
