  • 3 lbs chuck roast
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, quartered
  • 2 medium yellow onions, diced
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 275°F (135°C).
  2. Generously season the chuck roast with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast until browned on all sides.
  4. Remove the roast and sauté onions and garlic in the drippings until golden brown.
  5. Deglaze the pot with beef broth, returning the roast along with carrots, potatoes, thyme, and bay leaves.
  6. Cover and bake for about 3 hours or until fork-tender.
