- 1 cup chopped onion
- 1 cup sliced red bell pepper
- 1 cup sliced green bell pepper

- 8 oz cream cheese, softened
- 2 cups shredded mozzarella cheese
Instructions
- In a large pot, heat oil over medium-high heat and sear the beef chuck roast on all sides until browned. Remove the meat and set aside.
- In the same pot, add chopped onions and bell peppers; sauté until softened (about 5 minutes). Stir in minced garlic.
- Return the seared beef to the pot and pour in enough beef broth to cover everything. Bring to a boil, then reduce heat and simmer for about 2 hours until meat is fork-tender.
