  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp olive oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp mirin
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Place chicken breasts between plastic wrap and pound to an even thickness (about 1/2 inch).
