  • 4 bone-in skin-on chicken thighs
  • 1 medium fennel bulb, sliced
  • 4 garlic cloves, minced
  • 8 oz penne or rigatoni pasta
  • 3 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 2 tsp dried thyme or oregano

Instructions

  2. Season chicken thighs with salt, pepper, and dried herbs. Sear skin-side down until golden brown (5-7 minutes). Flip and add fennel and garlic; cook for another 2 minutes.
