Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ½ cup granulated sugar
- 24 oz (3 packs) Philadelphia cream cheese, softened
- 1 cup sour cream
- 2 tsp vanilla extract
- 4 large eggs
Instructions
- Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a springform pan to create the crust.
- In another bowl, beat the softened cream cheese until smooth. Add sour cream and vanilla extract, mixing until well combined. Gradually add eggs one at a time; mix just until incorporated.
- Pour the filling over the crust in the springform pan and gently tap it on the counter to release air bubbles.
- Place the springform pan in a larger baking dish filled with water (water bath) to prevent cracks while baking.
- Bake for approximately 60 minutes or until set but slightly jiggly in the center. Turn off the oven and leave inside for an additional hour with the door ajar. Refrigerate for at least four hours or overnight before serving.
