- 3–4 lbs chuck roast
- 1 packet (1 oz) ranch seasoning
- 6 whole pepperoncini peppers
- 1 cup low-sodium beef broth
- 2 tbsp unsalted butter
- 1 tsp garlic powder
Instructions
- Preheat your oven to 275°F (135°C).
- Season the chuck roast with salt and pepper. Sear in a hot skillet for 4-5 minutes on each side until golden brown.
- Place the seared roast in a Dutch oven or slow cooker. Sprinkle ranch seasoning over the top and add pepperoncini peppers along with some brine.
- Pour beef broth into the pot until it reaches halfway up the sides of the roast. Add butter.
- Cover and cook for 6-8 hours in the preheated oven or slow cooker until fork-tender.
- Shred meat directly in the pot using two forks and drizzle with broth before serving.
