- 3–4 lbs chuck roast
- 1 packet ranch dressing mix
- 1 packet au jus gravy mix
- 1/2 jar sliced pepperoncini peppers (about 12 peppers)
- 1 cup beef broth
- 8 sub rolls or hoagie buns
- 2 cups shredded provolone or mozzarella cheese
Instructions
- Preheat the oven to 275°F (135°C). Sear the chuck roast in a skillet over medium-high heat until browned on both sides, approximately 4 minutes each side.
- In a bowl, combine the ranch dressing mix and au jus gravy mix.
- Place the seared roast in a slow cooker or roasting pan. Sprinkle the seasoning mixture evenly over the top, then add sliced pepperoncini and their juice.
- Pour one cup of beef broth over the roast.
- Cover and cook for about 4 hours in the oven or on low for 6 hours in a slow cooker until fork-tender.
- Shred the meat with two forks directly in the pot and serve on soft rolls topped with melted cheese.
