  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar (divided)
  • 2 large eggs
  • Zest of 1 Meyer lemon
  • Juice of 2 Meyer lemons
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a bowl, mix melted butter with 1/4 cup granulated sugar and flour until crumbly. Press into the bottom of the dish.
  3. In another bowl, whisk together eggs, remaining sugar, lemon zest, and juice until smooth. Pour over the crust.
  4. Bake for 20-25 minutes until edges are golden and center is set but slightly jiggly.
  5. Cool completely before refrigerating for at least 2 hours. Dust with powdered sugar before serving.
