  • 2 tbsp vegetable oil
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh cilantro, chopped
  • 1/2 tsp cumin
  • 1/2 tsp chili powder

Instructions

  1. Rinse the rice under cold water until clear.
  2. In a large skillet over medium heat, heat vegetable oil. Sauté onion and garlic for about 3 minutes until fragrant.
  3. Add the rinsed rice and toast for 2 minutes until slightly golden.
  4. Stir in chicken broth, tomato sauce, cumin, and chili powder; mix well.
  5. Bring to a boil, cover with a lid, reduce heat to low, and simmer for 20 minutes or until liquid is absorbed.
  6. Let sit covered for an additional 5 minutes before fluffing with a fork and stirring in cilantro.
