- 1 cup shredded cheddar cheese
- ½ cup sour cream
Instructions
- Preheat oven to 400°F (200°C). In a skillet over medium-high heat, brown the ground beef until fully cooked; season with salt and pepper.
- Add diced onions and bell peppers; sauté until soft.
- Stir in black beans and diced tomatoes (with juice), simmer for 5 minutes.
- Prepare cornbread mix according to package instructions. Pour half into a greased baking dish.
- Layer the beef mixture over the cornbread base, then top with remaining cornbread batter.
