- 1 lb ground beef (80/20)
- 1 cup plain breadcrumbs
- ½ cup freshly grated Parmesan cheese
- ¼ cup chopped fresh parsley
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 (14 oz) can diced tomatoes
- 4 cups low-sodium chicken broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, parsley, salt, and pepper until just combined. Form into golf ball-sized meatballs.
- Heat olive oil in a large pot over medium heat. Brown meatballs for about 5-7 minutes; remove from pot.
- In the same pot, sauté carrots and celery for 3-4 minutes. Add minced garlic; cook for an additional minute.
- Stir in canned tomatoes and chicken broth; bring to a simmer.
- Return meatballs to the pot; simmer for 15-20 minutes until cooked through.
- Adjust seasoning if needed; serve hot with crusty bread.
