Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup whole milk (or almond milk)
  • 2 large eggs
  • 2 ripe mangoes, sliced
  • 1/2 cup coconut cream (full-fat preferred)
  • 2 tbsp sugar

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, and sugar until smooth. Let the batter rest for 30 minutes.
  2. Preheat a non-stick skillet over medium heat and add a little butter or coconut oil.
  3. Pour about half a cup of batter into the skillet, swirling to form an even layer. Cook for about 2 minutes until golden brown.
  4. Flip the crepe carefully and cook for another minute. Remove from heat and repeat with remaining batter.
  5. Assemble by spreading coconut cream on each crepe, adding sliced mangoes, then folding it up. Drizzle extra coconut cream on top before serving.
