  • 2 lbs Yukon Gold or red potatoes
  • 6 strips bacon
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 3 green onions, chopped

  • Paprika for topping

Instructions

  1. Wash and chop the potatoes into bite-sized pieces. Boil in salted water until fork-tender (15-20 minutes). Drain and cool.
  2. Cook bacon in a skillet until crispy. Drain on paper towels and chop.
