- 2 cups mashed potatoes (homemade or store-bought)
- 1 cup shredded cheddar cheese
- 1/2 cup panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil (for browning meatballs)
Instructions
- Preheat your oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
- In a bowl, mix ground beef, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper until well combined. Form into 1-inch meatballs.
- Heat olive oil in a skillet over medium-high heat and brown the meatballs on all sides (about 6 minutes).
- Spread half of the mashed potatoes in the baking dish. Layer the meatballs on top, then add the remaining mashed potatoes. Sprinkle shredded cheese over the top.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
- Let cool for a few minutes before serving.
