Instructions

- Boil the sweet potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
- In a large bowl, mash the sweet potatoes until smooth but still textured.
- Add the black beans (mashing some), breadcrumbs, cilantro, lime juice, cumin, and chili powder. Mix until combined.
- Form the mixture into patties about the size of your palm and place them on the prepared baking sheet.
- Bake for 25-30 minutes or until golden brown, flipping halfway through.
