  • 2 medium sweet potatoes (about 400g), peeled and cubed
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/4 cup lime juice (freshly squeezed)
  • 1 tsp garlic powder
  • 1/2 cup onion, finely chopped
  • 1 cup panko breadcrumbs
  • 1/4 cup fresh cilantro, chopped
  • For the Sauce: 1/2 cup Greek yogurt
  • 2 tbsp Sriracha sauce (adjust to taste)

Instructions

  1. Boil cubed sweet potatoes in water until tender, about 15-20 minutes. Drain and mash in a large bowl.
  2. Add black beans, onion, garlic powder, lime juice, and cilantro to the mashed sweet potatoes; mix until well combined.
  3. Gradually add panko breadcrumbs until the mixture holds together.
  4. Shape into patties (about palm-sized) and place on a plate.
  5. Heat oil in a skillet over medium heat; cook patties for 4 minutes per side until golden brown. Alternatively, bake at 400°F (200°C) for 25-30 minutes.
  6. Serve warm with Greek yogurt-Sriracha sauce drizzled on top.
