- 1/2 cup freshly squeezed lemon juice (about 2 lemons)
- 1 cup orzo pasta
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until soft (about 5 minutes).
- Add minced garlic and sauté for an additional minute.
- Stir in chicken broth and add seasoned chicken breasts. Bring to a simmer.
- Cover and cook for about 20 minutes until the chicken is cooked through.
- Remove chicken, shred it with two forks, and return it to the pot.
- Stir in orzo pasta and cook according to package instructions (usually around 8 minutes). Add lemon juice, thyme, salt, and pepper before serving.
