- 1 lb lean ground beef or turkey
- 1/4 cup chopped green onions
- 1/2 cup breadcrumbs
- 1 large egg
- 1/2 cup Korean BBQ sauce (divided)
- 1 cup bell peppers (chopped)
- 1 cup zucchini (sliced)
- 2 tbsp olive oil
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix ground beef or turkey, green onions, breadcrumbs, egg, salt, pepper, and half of the Korean BBQ sauce.
- Shape the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden brown.
- While baking, chop bell peppers and zucchini; toss with olive oil, salt, and pepper.
- Sauté in a skillet over medium heat for about 5 minutes; add remaining BBQ sauce to glaze.
- Serve meatballs with sautéed vegetables drizzled with extra sauce.
