  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sake
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup cornstarch
  • Vegetable oil for frying
  • 2 tbsp Japanese mayonnaise (for serving)

Instructions

  1. Cut chicken thighs into bite-sized pieces. In a bowl, mix soy sauce, sake, garlic, and ginger. Add chicken and marinate for at least 30 minutes or up to overnight.
  2. After marinating, drain excess marinade and coat each piece of chicken in cornstarch.
  3. Heat vegetable oil in a deep pan to 350°F (175°C). Fry the chicken in batches for about 5-7 minutes until golden brown and crispy.
  4. Drain on paper towels and serve hot with a drizzle of Japanese mayonnaise or lemon wedges.
