Description

Japanese pancakes, also known as soufflé pancakes, are a fluffy breakfast wonder that will elevate your brunch game. Light and airy, these pancakes offer a delightful combination of buttery flavor and sweetness, making them perfect for a special treat. Stack them high and top with maple syrup, fresh fruits, or whipped cream for a picture-perfect presentation that will impress family and friends.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 3/4 cup whole milk
  • 2 large eggs (separated)
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter (melted)

Instructions

  1. In a bowl, combine flour, sugar, baking powder, and salt.
  2. In another bowl, whisk egg yolks with milk and vanilla. Mix with dry ingredients until just combined.
  3. In a separate bowl, beat egg whites until stiff peaks form, then gently fold into the batter.
  4. Preheat a non-stick skillet over low heat and grease lightly. Pour in batter (about half a cup per pancake) and cover with a lid to trap steam.
  5. Cook for about 3-4 minutes until bubbles form; flip and cook for another 2-3 minutes until golden brown.
  6. Serve stacked high with your favorite toppings.
