  • 1 cup dried black-eyed peas (or 1 can, rinsed)
  • 1 cup long-grain rice
  • 1 smoked ham hock
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tsp cayenne pepper (adjust to taste)
  • 2 bay leaves

Instructions

  1. If using dried black-eyed peas, soak overnight. If using canned, rinse and set aside.
  2. In a large pot over medium heat, sauté chopped onion in a splash of oil until translucent. Add minced garlic and cook for another minute.
  3. Stir in the ham hock and let it cook for about two minutes.
  4. Add the soaked black-eyed peas (or canned), rice, bay leaves, cayenne pepper, and broth. Mix well.
  5. Cover the pot and bring to a gentle boil; then reduce heat to low and simmer for about an hour or until both peas and rice are tender. Stir occasionally.
  6. Remove bay leaves before serving; garnish with fresh herbs if desired.
