Ingredients

  • 1 lb fresh okra
  • 1 cup white vinegar
  • 1 cup filtered water
  • 3 tbsp coarse salt
  • 1 tbsp sugar
  • 4 garlic cloves, crushed
  • 2 tsp mustard seeds
  • 2 tsp dill seeds
  • 1 tsp crushed red pepper flakes (optional)

Instructions

  1. Wash the fresh okra under cold water until clean.
  2. In a saucepan, combine white vinegar, filtered water, salt, sugar, garlic cloves, and spices. Heat until dissolved and bring to a gentle boil.
  3. Pack clean jars tightly with the okra. Optionally layer in extra spices or garlic.
  4. Pour hot brine over packed okra until fully submerged, leaving half an inch at the top.
  5. Seal jars tightly and let cool at room temperature before refrigerating.
  6. Allow to pickle for at least two days for optimal flavor before enjoying.
