- 1 cup whole-wheat breadcrumbs
- 1 large egg

- 1 cup zucchini, grated
- 1 cup long-grain white or brown rice
- 2 cups low-sodium tomato sauce
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Chop the bell peppers and zucchini into bite-sized pieces.
- In a large bowl, mix ground turkey or beef, breadcrumbs, grated zucchini, egg, parsley, salt, and pepper until just combined.
- Form the mixture into golf ball-sized meatballs and set aside.
