  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and combine with 2 cups water in a saucepan. Bring to a boil, then simmer covered for about 15 minutes until fluffy.
  2. Preheat oven to 400°F (200°C). Drain and rinse chickpeas; pat dry. Toss with olive oil, salt, pepper, and spices of choice. Roast for 20-25 minutes until crispy.
  3. Dice cherry tomatoes and cucumber into bite-sized pieces.
  4. For the dressing, whisk together olive oil, lemon juice, oregano, salt, and pepper in a bowl.
  5. In meal prep containers, layer quinoa first, followed by roasted chickpeas, chopped veggies, and feta cheese. Drizzle with dressing.
  6. Seal containers tightly and store in the fridge for up to five days.
